To prepare this dish, you will need;

  • 2 large russet potatoes
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter melted
  • 3/4 tsp salt or to taste
  • 1/2 tsp ground black pepper
  • 3 medium scallions, chopped
  • 1/2 cup sour cream
  • 3/4 cup shredded cheddar cheese
  • 4 strips bacon, chopped into small pieces, cooked
  • 2 tbsp chives, chopped, for garnishing

Instructions;

  1. Preheat the oven to 400 degrees F (200
  2. Prick the top of the potato with a fork then rub each potato with oil
  3. Place the potatoes on a baking sheet and bake for 1 hr.
  4. Remove the potatoes from the oven and cut each into half (lengthwise)
  5. Using a spoon, gently scoop out the inside flesh of the potatoes and transfer to a bowl. Do not throw the skin Tip; if potatoes are not fully cooked, microwave for 2-3 minutes before the next step
  6. Add the melted butter, sour cream, scallions, salt, pepper, half the cheese and combine with a fork until evenly mixed
  7. Using a spoon, transfer the mixture back into the potato skin and bake for 10 min
  8. Sprinkle the potatoes with the remaining cheese and bacon and bake for another 5 minutes
  9. Garnish with chives and serve
  10. Enjoy!
