Healthy Spinach Egg Salad

Light, easy to prepare spinach egg salad that can be customized with your favourite add-ons.

For the Salad

  • 4 cups baby spinach or 4 handfuls
  • 4 medium eggs boiled, peeled and sliced into rounds
  • 10 cherry tomatoes halved
  • 1/4 small onion sliced
  • 1 cup rotisserie chicken chopped

For the dressing

  • 1/8 cup olive oil extra virgin
  • 2 tbsp red wine vinegar
  • 1.5 tsp honey
  • 1.5 tsp dijon mustard
  • Salt & Pepper to taste
  • 1 small garlic clove minced


  • Combine all the dressing ingredients in a mason jar, cover and shake vigorously to combine. Set aside
  • Add spinach, half the onions and tomatoes to a bowl, drizzle with half the dressing and toss to combine. Top with the eggs, chicken, and the rest of sliced onions then drizzle with the rest of the dressing.
  • Serve and enjoy!


You can never go wrong with this spinach salad. It is easy to customize with your favourite proteins and fruits to suite your family palate. Some of the items you can add include;
  • Sweet potatoes - swap the chicken for a vegetarian spinach salad option then simply dice the sweet potatoes, toss with olive oil, salt, pepper, sugar/honey/sweetener and roast. 
  • Fruits - Feel free to use your favourite crisp apple. Wash, core and slice them thinly before adding to the salad. You can also add pieces of mandarins, strawberries, grapes , cranberries or avocado.
  • Protein - You can add grilled/baked chicken, fish steaks, tofu, shrimp, bacon bits etc
  • Nuts - Add 1/4 cup of roasted pecans or walnuts to give it the crunch
  • Cheese - Sprinkle a handful of feta, goat cheese or parmesan
Double or triple the dressing ingredients and keep in the fridge for your next salad!
