Ingredients
  

For the Salad

  • 4 cups baby spinach or 4 handfuls
  • 4 medium eggs boiled, peeled and sliced into rounds
  • 10 cherry tomatoes halved
  • 1/4 small onion sliced
  • 1 cup rotisserie chicken chopped

For the dressing

  • 1/8 cup olive oil extra virgin
  • 2 tbsp red wine vinegar
  • 1/5 tsp honey
  • 1/5 tsp dijon mustard
  • Salt & Pepper to taste
  • 1 small garlic clove minced

Instructions
 

  • Combine all the dressing ingredients in a mason jar, cover and shake vigorously to combine. Set aside
  • Add spinach, half the onions and tomatoes to a bowl, drizzle with half the dressing and toss to combine. Top with the eggs, chicken, and the rest of sliced onions then drizzle with the rest of the dressing.
  • Serve and enjoy!
