Combine all the dressing ingredients in a mason jar, cover and shake vigorously to combine. Set aside
Add spinach, half the onions and tomatoes to a bowl, drizzle with half the dressing and toss to combine. Top with the eggs, chicken, and the rest of sliced onions then drizzle with the rest of the dressing.
