This chopped salad bursts with flavours of the Mediterranean. The fresh lemon juice and the Kalamata olives give the salad a bold flavour. The dressing is made with healthy extra virgin olive oil, fresh lemon for zest and tang, and a touch of salt and pepper which highlights the fresh flavours of the vegetables and adds a nice bit of Mediterranean flair.

Directions

Step 1

Add the cucumber, lettuce, olives, tomatoes, chickpeas, bell pepper, onion, and olives to your medium bowl. Toss to combine.

Step 2

In a separate bowl, whisk together olive oil, dijon, lemon juice, salt, sweetener, and pepper, and toss evenly to coat the vegetables.

Add feta and mix then serve.

Note's

Remove chickpeas for keto option.
