Classic Chicken Salad

Every family's summer favourite salad. Made with dijon, celery, mayo and other fun ingredients. Great for lunch sandwiches, last-minute office potlucks and family gatherings.

Ingredients
  

  • 3 cups cooked chicken shredded
  • 2 scallions chopped
  • 1 stalk celery finely chopped
  • 1 tsp Dijon mustard
  • 3 tbsp dill pickle finely chopped
  • 1/4 cup sour cream
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp lemon juice
  • 1 tsp sweetener

Instructions
 

  • Combine all ingredients minus chicken in a large bowl
  • Add chicken then mix well.
  • Serve as is or on sandwich bread.

Notes

  • Rotisserie chicken works great for this recipe. If you don't have one available, you can use chicken boiled down in spices and then shredded. 
  • This meal will last for 3-4 days in the fridge. 
  • Feel free to add different veggies, avocados, dried cranberries, fruits and nuts. However, depending on the amount, you may need to adjust the mayo to maintain the creaminess.
