Cut a hole in the center of each slice of bread. Reserve the centers of the bread for another use such as breadcrumbs or in the same pan.
Spread ½ teaspoon of butter on each of the slices of bread.
Coat a nonstick skillet with cooking spray and more butter and heat over medium-high heat. When the cooking spray starts shimmering, place the bread (buttered-side up) in the skillet.
- Crack 1 egg and gently pour the egg into the center hole of the bread then season with salt and pepper. Repeat with the 3 remaining eggs and bread
Cook for 3 minutes until the eggs are set, and carefully flip over each piece.
Gently place 1 slice of cheese
(if using) and the tomato slice onto the egg, and continue cooking for 2 minutes until the eggs are cooked to desired consistency, and the cheese has slightly melted.
