  1. Heat the oven to 350 degrees. Grease a 9′ loaf tin then line with a parchment paper.
  2. Sift flour, cinnamon, salt and baking powder into a bowl. Set aside
  3. In another bowl using a handheld mixer, beat the butter and sugar on high speed until; smooth and creamy
  4. Add the eggs and vanilla and continue to beat until light and fluffy
  5. Gradually mix in the flour mixture until combined
  6. Fold in the chopped apples and pour batter into the pan
  7. Bake for 45 minutes or until a toothpick comes out clean if inserted in the middle
  8. Let sit for 5-10 minutes then transfer to a cooling rack
  9. Using a sieve, sprinkle confectioners sugar if using
