You can use a round baking pan if preferred. A 9-inch would work fine for this recipe.

  • 1 baking pan 9"


  • 2 medium apples peeled, cored and cut into small (1/2 inch) cubes
  • 1 cup all-purpose flour
  • 2/3 cup sugar
  • 2 large eggs room temperature
  • 1/2 cup butter softened
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1 tsp ground cinnamon
  • confectioners sugar optional, for decoration
  • 1/4 cup milk


  • Heat the oven to 350 degrees. Line a 9' loaf tin with a parchment paper or spray it with baking spray
  • Sift flour, cinnamon, salt, and baking soda into a bowl. Set aside
  • Beat eggs one at a time and stir in vanilla. Add the sifted dry items.
  • Use a spatula to fold in the chopped apples
  • Spoon the mixture into the loaf pan
  • Bake for 40-45 minutes or until a toothpick comes out clean if inserted in the center of the cake
  • Cool for 5-10 minutes then transfer to a cooling rack
  • If using confectioners, sprinkle some on top and serve
