Easy breakfast burritos filled with sausages, scrambled eggs, onions, and bell peppers

  • 4 medium tortillas
  • 6 large eggs
  • 1/4 cup half & half milk
  • 1/2 tsp salt or to taste
  • 6 sausage links chopped in small pieces
  • 2 tbsp olive oil
  • 1 medium avocado sliced/chopped
  • 1 half fresh lemon juice
  • 1/4 tsp red pepper flakes optional
  • 1/2 green bell pepper chopped
  • 8 medium cherry tomatoes sliced into half
  • 1/2 cup shredded cheddar or 4 slices
  • 1 medium onion sliced
  • 4 tbsp sour cream


  • In a small bowl, beat eggs, half & half and salt. Set aside
  • Heat a medium non-stick skillet over medium heat then add the olive oil and sausage pieces.
  • Sautee for a few minutes until it starts to brown then add onions.
  • Cook for another 2 minutes until the onions are translucent then add the bell peppers and red pepper flakes. Cook for another 2 minutes then using a slotted spoon, remove and set aside.
  • In the same skillet, add the egg mixture and scramble until the eggs are just cooked through (about 2-3 min) Remove and set aside

Assembling the Burritos

  • Spread 1 tbsp in the centre of a tortilla
  • Top with the sausage mix followed by eggs then avocado, eggs and cheese then drizzle lemon juice
  • Do not overfill, otherwise, it will be difficult to roll
  • Flap the bottom of the burrito carefully. Fold in the edges tightly and roll to seal. Repeat with the rest of the burritos.
  • Serve and enjoy
