Ingredients
  

  • 2 medium apples peeled, cored and cut into small (1/2 inch) cubes
  • 1 cup all-purpose flour
  • 2/3 cup sugar
  • 2 large eggs room temperature
  • 1/2 cup butter softened
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1 tsp ground cinnamon
  • confectioners sugar optional, for decoration
  • 1/4 cup milk

Instructions
 

  • Heat the oven to 350 degrees. Grease a 9' loaf tin then line with a parchment paper.
  • Sift flour, cinnamon, salt and baking powder into a bowl. Set aside
  • In another bowl using a handheld mixer, beat the butter and sugar on high speed until; smooth and creamy
  • Add the eggs and vanilla and continue to beat until light and fluffy
  • Gradually mix in the flour mixture until combined
  • Fold in the chopped apples and pour batter into the pan
  • Bake for 45 minutes or until a toothpick comes out clean if inserted in the middle
  • Let sit for 5-10 minutes then transfer to a cooling rack
  • Using a sieve, sprinkle confectioners sugar if using
