  • If using fresh cauliflower, place in a food processor in small batches and pulse to make cauliflower rice.
  • Heat a large skillet over medium heat and cook the bacon until crisp. Remove with a slotted spoon and set aside
  • Remove half the bacon fat and add eggs to the skillet and scramble (about 1-2 minutes) Remove and set aside
  • Add butter and half of the bacon to the skillet. Add garlic, followed by cauliflower rice almost immediately. You don't want the garlic to burn.
  • Increase heat to high and sautéed rice until tender and crispy.
  • Add soy sauce, sweetener, bacon, eggs, pepper and continue sautéing for another 1-2 minutes. Remove from heat and serve!
