Delicious Shrimp Pineapple Skewers

As the summer approaches, many of us seek light and refreshing dishes for potlucks, barbecues, picnics, and family and outdoor gatherings. One such dish that fits the bill is shrimp pineapple skewers. These colourful and flavorful skewers are easy to make, require minimal ingredients, and are sure to impress any crowd. Pair them with coconut or your favourite
rice and or a salad for a complete dish.
To prepare this dish, you will need;
Ingredients
  • 480 g shrimp, peeled and deveined
  • 1 cup pineapple chunks
  • 1 red and orange bell pepper, cut into large pieces
  • 1/2 large onion cut into large pieces
  • 2 tbsp Worcestershire sauce
  • 2 tbsp white vinegar
  • Juice from a 1 lime
  • 1/2 medium orange zest and juice
  • 1 tsp cooking wine
  • 1/2 tsp paprika
  • 2 cloves garlic minced
  • 1/2 tsp minced ginger
  • scotch bonnet finely chopped
  • 1/4 cup sweet chilli
  • 1/4 tsp salt or to taste
  • 10-12 bamboo skewers, soaked in water for 30 minutes
Instructions
1. Preheat your grill to medium-high heat.
2. Whisk together all the ingredients in a medium bowl. Mix to combine. Marinate in the fridge for up to 24 hours (optional)
3. Thread the shrimp and vegetables onto the bamboo skewers.
4. Brush the shrimps with half of the marinade
5. Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, or until the shrimp are pink and cooked through. Brush with the remaining marinade and grill for another 2 minutes
6. Serve immediately, garnished with cilantro if desired
