Ingredients for Skewers
- 480 g shrimp, peeled and deveined
- 1 cup pineapple chunks
- 1 red and orange bell pepper, cut into large pieces
- 1/2 large onion cut into large pieces
- 2 tbsp Worcestershire sauce
- 2 tbsp white vinegar
- Juice from a 1 lime
- 1/2 medium orange zest and juice
- 1 tsp cooking wine
- 1/2 tsp paprika
- 2 cloves garlic minced
- 1/2 tsp minced ginger
- scotch bonnet finely chopped
- 1/4 cup sweet chilli
- 1/4 tsp salt or to taste
- 10-12 bamboo skewers, soaked in water for 30 minutes
Instructions
- Preheat your grill to medium-high heat.
- Whisk together all the ingredients in a medium bowl. Mix to combine. Marinate in the fridge for up to 24 hours (optional)
- Thread the shrimp and vegetables onto the bamboo skewers.
- Brush the shrimps with half of the marinade
- Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, or until the shrimp are pink and cooked through. Brush with the remaining marinade and grill for another 2 minutes
- Serve immediately, garnished with cilantro if desired
