Whisk together all the ingredients in a medium bowl. Mix to combine. Marinate in the fridge for up to 24 hours (optional)
Thread the shrimp and vegetables onto the bamboo skewers.
Brush the shrimp with half of the marinade
Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, or until the shrimp are pink and cooked through. Brush with the remaining marinade and grill for another 2 minutes
Serve immediately, garnished with cilantro if desiredÂ
