Ingredients
  

  • 480 g shrimp peeled and deveined
  • 1 cup pineapple chunks
  • 1/2 medium red pepper cut into large pieces
  • 1/2 medium orange pepper cut into large pieces
  • 1/2 large onion cut into large pieces
  • 2 tbsp Worcestershire sauce
  • 2 tbsp white vinegar
  • 1 small lime juice
  • 1/2 medium orange juice and zest
  • 1 tsp cooking wine
  • 1/2 tsp paprika
  • 2 cloves garlic minced
  • 1/2 tsp ginger minced
  • 1/4 cup sweet chilli
  • 1 medium scotch bonnet finely chopped

Instructions
 

  • Preheat your grill to medium-high heat.
  • Whisk together all the ingredients in a medium bowl. Mix to combine. Marinate in the fridge for up to 24 hours (optional)
  • Thread the shrimp and vegetables onto the bamboo skewers.
  • Brush the shrimp with half of the marinade
  • Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, or until the shrimp are pink and cooked through. Brush with the remaining marinade and grill for another 2 minutes
  • Serve immediately, garnished with cilantro if desired
