Pineapple Chicken Curry

Incredibly delicious, full of flavour pineapple chicken curry.

Ingredients
  

  • 1 lb chicken thigh boneless skinless chopped
  • 1 medium onion chopped
  • 1 tsp garlic minced
  • 1 tsp ginger minced
  • 1 tbsp curry powder
  • 2 tbsp chicken broth powder
  • 1/4 tsp cayenne optional
  • 2 cup pineapple chopped into cubes. (fresh or frozen)
  • 1 cup coconut milk
  • 1/2 tsp turmeric powder
  • 1 tsp cilantro chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice

Instructions
 

  • Heat olive oil in a pan over medium heat.
  • Add chicken, ginger and garlic and cook until no longer pink and the water evaporates. Remove then set aside
  • Add onion and saute until translucent.
  • In a blender, add mangoes, coconut milk, and onions and blend until smooth.
  • Return the sauce to the pan and add the chicken. Add the spices and cover to simmer for 10 min.
  • Remove and add lemon juice then sprinkle cilantro on top. Serve

Notes

  • If you love butter, curry, or mango chicken, then you will definitely fall in love wth this pineapple chicken. 
  • This curry is best served with a side of basmati rice, naan bread or chapati. For people watching their carb intake, cauliflower is the way to go. I served this dish with cauli rice and it was a big hit. 
  • You can add steamed vegetables to make this a complete meal
  • I used ripe sweet pineapple. If your pineapple is not sweet, you can add a little sweetener, honey or sugar to sweeten it. 
  • This meal will last in the fridge for 3 days. After that, I would recommend freezing it. It does freeze well. 
  • You can use frozen pineapples if you don't have a fresh ones. Just taste before serving to ensure it's no sour and add some sweetness to it if need be.
