Biryani is a popular Indian rice dish that is full of flavour, spices, and fragrant aromas. It is a dish that is loved by people all around the world. There are many different types of Biryani, but the most popular one is Chicken Biryani. This dish combines succulent chicken, fragrant spices, and aromatic rice.

To make this perfect Chicken Biryani, you will need

Ingredients:

For the chicken:

– 1/2 kg chicken pieces (thighs/drumsticks)
– 1/4 cup yogurt/sour cream
-1 tbsp garlic ginger paste
-1 tbsp salt or to taste
-1/4 tsp turmeric
-1 tbsp paprika
-1 tsp garam masala
-1/2 tsp chilli powder
-1 green chilli
-1 tbsp lemon juice
– 2 tablespoons oil or ghee
For the rice
– 6 green cardamoms (crushed)
-6 cloves
-1 cinnamon stick
– 1 tsp salt or to taste
– 2 cups rice (rinsed)
-4 cups water
Other
-1 pinch saffron soaked in 2 tbsp hot water
-1 large onion sliced and fried
1) In a small bowl, mix yogurt/sour cream, garlic ginger paste, salt, turmeric, paprika, garam masala, chilli powder, and lemon juice
2) Pour the marinade into the chicken. Mix well and set aside
3)  Heat oil in a pan, add onions and fry until brown. Remove and set aside
4) Add water, crushed cardamoms, cloves, and salt to a pot. Boil for 5 minutes until fragrant.
5) Using a sieve, remove the seeds  (optional) you can skip this part if you like the seeds
6) Add rinsed rice to the pot and boil for 5 minutes. Save 2 cups of water from the boiled rice. Drain the rice and set aside.
7)Heat oil/ghee to a pot then add the marinated chicken. Cook on medium heat for about 15 minutes or until the liquid dries up and the chicken cooks through
8) Sprinkle half of the fried onions, followed by the parboiled rice and then the rest of the onions
9) Add the 2 cups of water drained from the rice. Level the rice then randomly pour the saffron.
10) Turn the heat to your lowest setting, cover the pot with a tight-fitting lid then cook for 15 minutes.
11) Fluff and serve hot

  • 2 cups basmati rice rinsed
  • 4 cups water

Others

  • 1 pinch saffron soaked in 2 tbsp hot water
  • 1 large onion sliced and fried

Instructions
