Ingredients:

  • 2 cups shrimp small-medium fresh/thawed (about 15-20) pieces
  • 2 cups cooked rice (preferably day-old rice) I use jasmine
  • 2 medium eggs
  • 2 tbsp butter (divided)
  • 2 tbsp sesame oil
  • 3/4 cup mixed peas and carrots
  • 1/2 cup frozen corn
  • 1 tsp garlic ginger paste
  • 1 tbsp hoisin sauce
  • 2 tbsp soy sauce
  • 2 medium scallions (chopped)
  • 1/4 tsp salt or more to taste
  • 1/2 tsp crushed pepper or cayenne or more to taste (optional)

Instructions:

  1. Heat butter in a large skillet over medium heat
  2. Add shrimp and garlic ginger paste and cook until pink. Drain the extra liquid if excess to use later.
  3. Once the rest of the liquid dries up, remove the shrimp and set aside
  4. Add the rest of the butter and cook vegetables until tender, about 3-4 minutes
  5. Create a hole and add the eggs to scramble
  6. Add the spices, sesame oil and the sauces followed by the chilled rice and sauté until combined
  7. Return shrimp to the skillet and stir fry until everything is well combined
  8. Season with salt and pepper to taste
  9. Garnish with chopped scallions and serve hot.

  • 2 medium scallions chopped (whites separated)
  • 1/4 tsp salt or more to taste
  • 1/2 tsp crushed pepper or cayenne pepper or more to taste optional

Tips and Variations

  • If you don’t have cold rice, add 1 cup of rinsed jasmine rice to 1.5 cup water, butter, and salt to taste. Bring to a boil then cover reduce heat to low and cover the rice to slowly cook. Once cooked spread the rice in a flat wide container and place it in the freezer for about 15 minutes or fridge for a bit longer to cool
