Ingredients:
- 2 cups shrimp small-medium fresh/thawed (about 15-20) pieces
- 2 cups cooked rice (preferably day-old rice) I use jasmine
- 2 medium eggs
- 2 tbsp butter (divided)
- 2 tbsp sesame oil
- 3/4 cup mixed peas and carrots
- 1/2 cup frozen corn
- 1 tsp garlic ginger paste
- 1 tbsp hoisin sauce
- 2 tbsp soy sauce
- 2 medium scallions (chopped)
- 1/4 tsp salt or more to taste
- 1/2 tsp crushed pepper or cayenne or more to taste (optional)
Instructions:
- Heat butter in a large skillet over medium heat
- Add shrimp and garlic ginger paste and cook until pink. Drain the extra liquid if excess to use later.
- Once the rest of the liquid dries up, remove the shrimp and set aside
- Add the rest of the butter and cook vegetables until tender, about 3-4 minutes
- Create a hole and add the eggs to scramble
- Add the spices, sesame oil and the sauces followed by the chilled rice and sauté until combined
- Return shrimp to the skillet and stir fry until everything is well combined
- Season with salt and pepper to taste
- Garnish with chopped scallions and serve hot.

- If you don’t have cold rice, add 1 cup of rinsed jasmine rice to 1.5 cup water, butter, and salt to taste. Bring to a boil then cover reduce heat to low and cover the rice to slowly cook. Once cooked spread the rice in a flat wide container and place it in the freezer for about 15 minutes or fridge for a bit longer to cool
