Flavorful, easy-to-make one-pan shrimp fried rice for those busy weeknights

  • 2 cups shrimps small-medium size thawed/fresh about 15-20 pcs
  • 2 medium eggs beaten
  • 2 tbsp sesame oil
  • 3/4 cup mixed peas and carrots
  • 1 tsp garlic ginger paste
  • 1 tbsp hoisin sauce
  • 2 tbsp soy sauce
  • 2 cups cooked rice - cold I use white jasmine rice
  • 2 medium scallions chopped
  • 1/4 tsp salt or more to taste
  • 1/2 tsp crushed pepper or more to taste optional
  • 1/2 cup frozen corn


  • Start with rice if you don't have one that's already cooked. I
  • Add 1 cup of jasmine rice to 2 cups of boiling water, butter and salt to taste.
  • Cover and cook on low heat then transfer to a wide plate or container
  • Place in the freezer for about 20 minutes or fridge for a bit longer to cool down.
  • Note: It is important for the rice to be cold otherwise it will get mushy.
  • Add oil to a skillet followed by shrimp and garlic ginger paste and cook over medium heat. Remove then set aside
  • To the same pot, add the vegetables minus half the scallions and cook until fragrant.
    Create a hole and add eggs to cook to scramble
  • Add shrimp, rice, pepper, and the sauces and stir to combine.
    Serve and sprinkle the rest of the scallions on top.


  • You can substitute frozen vegetables for fresh ones. Feel free to add sprouts, cabbage, bell peppers etc.
  • Ensure that the rice is cold prior to cooking. You can use leftover rice or cook fresh (see 1st step on instructions)
  • You can substitute scallions for white or red onions
  • This meal can be stored in the fridge for 3-4 days.
  • For low-carb options, substitute rice with cauliflower rice and replace the vegetables with celery and bell peppers
