While there are different kinds of lentils, today we’ll use the yellow lentils. Please note that you can also use the green lentils as well. However, you’ll have to boil if first before cooking. To prepare this dish, you will need;
– 1 cup dried yellow lentils, soaked in cold water for 10 minutes then rinsed well
– 1 tsp curry powder
– 3 tbsp olive oil
– 1 medium onion chopped
– 1 tsp garlic minced
-1 cup shredded carrots
– 1 tsp paprika
– 1/2 tsp ground cumin
– 2 large ripe tomatoes
– 1 large red bell pepper
– Salt and pepper, to taste
– 1/4 tsp cayenne pepper (optional)
-1 handful chopped cilantro (optional)
-2 tbsp knorr chicken broth powder
-4 cups chicken broth or water
1. Blend the tomatoes and bell pepper in a blender
2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until slightly brown
3. Add the pureed mixture and cook to a paste-like consistency. Add the spices and cook for a minute
4. Add the soaked lentils, carrots and water and mix well
5. Bring the mixture to a boil, then reduce the heat to low and simmer for 30-40 minutes, or until the lentils are tender.
6. Garnish with cilantro and serve hot

  • 1 cup yellow lentil soaked in cold water for 10 min. then rinsed well
  • 1 tsp curry powder
  • 3 tbsp olive oil

  • 1 cup carrots shredded
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • 2 large tomatoes ripe
  • 1 large red bell pepper roughly chopped
  • 1 handful cilantro optional
  • 1/4 tsp cayenne optional
  • 3 tbsp knorr chicken broth powder
  • salt and pepper to taste
  • 4 cups chicken broth


  • Puree the tomatoes and bell pepper in a blender.
  • Heat olive oil in a medium pot and then add the onions. Sautee until slightly browned then add garlic and cook for about a minute.
  • Add the pureed mixture to the pot
  • Cook the tomatoes to a paste-like consistency and then add the spices
  • Add the soaked lentils, carrots, water/broth and stir well. Cook covered for 30-40 min or until soft. Add more water if needed to the desired consistency. Adjust salt to taste
  • Serve and garnish with cilantro if using
