Simple, Flavourful Yellow Lentil Soup

  • 1 cup yellow lentil dried
  • 1 tsp curry powder
  • 3 tbsp olive oil
  • 1 medium onion chopped
  • 1 tsp garlic mined
  • 1 cup carrots shredded
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • 2 large tomatoes ripe
  • 1 handful cilantro optional
  • 1/4 tsp cayenne optional
  • 3 tbsp knorr chicken broth powder
  • salt and pepper to taste
  • 4 cups chicken broth


  • Soak the lentil for 10 minutes. Rinse well
  • While soaking, gather ingredients for the dish
  • Puree the tomatoes in a blender. If using cilantro, puree as well leaving a small piece for garnishing
  • Heat oil in a large pot over medium heat, cook garlic and onion for 2 min until it browns
  • Add pureed tomatoes and cook for about 3 minutes then add the spices
  • Cook the tomatoes to a paste-like consistency
  • Add the soaked lentil, carrots, water/broth and stir well. Cook covered for 20-30 min or until soft. Add more water if needed to the desired consistency. Season to taste with salt.
  • Serve and garnish with cilantro if using


  • Chicken broth contains sodium so tends to be salty. Do not add salt to this dish before tasting it first. Otherwise, it will turn out to be very salty. 
  • For the Vegetarian option, replace the chicken broth with vegetable broth or eliminate the broth and use water. You will also need to add salt if using water. 
  • You can substitute the yellow lentils with another kind of lentils. Just be mindful of the timing. Some tend to need more time to cook therefore, you may also need to soak it for a longer period of time. 
  • You can add butternut squash, spinach, celery or red bell pepper to this dish for a more nutrient-dense version
  • This dish can be served with a piece of warm bread, chapati, or rice.
