Ingredients:
- 2 chicken thighs
- 1 tbsp cajun
- 2 garlic cloves peeled
- 1 small piece of fresh ginger, crushed
- 1 cup water
- 2 tbsp mayo
- 1 tbsp sour cream
- 1 tbsp lemon juice
- 1 tbsp onion (finely chopped)
- 1/2 celery finely chopped
- 2 tsp Dijon mustard
- 1/4 tsp cayenne pepper (optional)
- Salt and pepper to taste
- 1 tbsp butter
- 4-6 slices of bread
Instructions;
- Place chicken thighs in a small pan and add the water, ginger, garlic, and the cajun seasoning
- Boil, cover then bring to a simmer and cook down until water dissolves
- Remove from the stove then shred the chicken and chop to bite sizes
- In a medium bowl, mix the mayo, sour cream, dijon, salt and pepper, cayenne, and mix. Add the chopped onions, celery and lemon juice and mix well to combine. Set aside
- Heat a grilling pan on medium heat, spread butter on one side of each bread then toast each side. Place the toast onto a flat surface then spread the chicken mix evenly. Slice to a desired shape and then serve right away. You can skip this step if not serving the sandwich right away.
