Flavourful Home-made Beef Stew

Ingredients:

– 1 pounds beef, cut into 1-inch cubes

– 2 tablespoons olive oil

– 1 medium onion, chopped

– 2 garlic cloves, minced

– 3 cups beef broth

– 3 medium fresh tomatoes (finely chopped or pureed)

– 1 tbsp paprika

– 3 carrots, peeled and diced

– 1/4 tsp cayenne pepper (optional)

– 3 potatoes, peeled and cubed

– Salt and pepper to taste

– Chopped fresh parsley for garnish

 

Instructions:

1. In a large skillet, heat the olive oil over medium-high heat.

2. Add the beef and turn the heat to medium. Cook until browned on all sides (about 30 minutes)

3. Add the onion and garlic to the pot and cook until the onion is translucent about 5 minutes.

4. Add the tomatoes and cook for 3 minutes. Add potatoes and cook for another 3 minutes then add paprika, cayenne pepper (if using), salt and stir to combine. Cover and cook for an additional 5 minutes then add the carrots and broth.

5. Bring to a boil then cover and simmer for about 20 minutes or until the sauce has thickened.

6. Garnish with parsley and serve hot
