Lemongrass chicken is a popular dish in Southeast Asian cuisine, particularly Thai, Vietnamese, and Indonesian cooking. This flavorful and aromatic dish is made with marinated chicken cooked in lemongrass, garlic, ginger, and chillies, resulting in a deliciously savoury and slightly spicy flavour profile. This dish is often served with plain rice, noodles or roti but we enjoyed it with coconut-flavoured rice. The combo was very delicious.
Lemongrass chicken is not only a tasty dish, but it also offers several health benefits. Lemongrass is a good source of vitamins A and C, potassium, and magnesium, making it a nutritious addition to your meals. Additionally, lemongrass has antibacterial and anti-inflammatory properties, which can help boost your immune system.
To make this dish, you will need;
Ingredients:
- 8 pieces drumsticks
- 2 stalks lemongrass, roughly chopped
- 1 tbsp cooking oil
- 4 cloves garlic
- 1-inch fresh ginger
- 1 tbsp curry powder
- 4 green chillis
- 1 tbsp paprika
- 1 cup coconut milk
- 1 tbsp honey
- 2 tbsp lemon, divided
- Salt and pepper to taste
Instructions:
- In a medium bowl, add the chicken, half of the curry powder, half of the paprika, oil and salt. Mix to incorporate
- In a blend add the ginger, garlic, chillis, 1 tbsp lemon juice, lemongrass and half a cup of water and blend.
- Add half of the blended mixture to the chicken and mix well. Marinate for a minimum of an hour or up to 24 hours.
- Set your oven (I use this countertop oven ) to 425 degrees and bake for 20 minutes. Flip and bake for another 15 minutes.
- In a pan add the rest of the blended mixture, add the rest of paprika and curry powder and bring to a boil.
- Add the coconut milk and honey then continue to boil. Add the baked chicken and simmer for about 10 minutes or until the sauce thickens.
- Add the lemon juice and remove from the heat
- Serve and enjoy!
