Flavourful Lemongrass Chicken Recipe
Marinated chicken cooked in a mixture of lemongrass and other ingredients resulting in a savoury, and slightly spicy dish.

coconut milk

honey

Instructions
In a medium bowl, add the chicken, half of the curry powder, half of the paprika, oil and salt. Mix to incorporate
In a blend add the ginger, garlic, chillis, 1 tbsp lemon juice, lemongrass and half a cup of water and blend.
Add half of the blended mixture to the chicken and mix well. Marinate for a minimum of an hour or up to 24 hours.
Set your oven (I use this
countertop oven
) to 425 degrees and bake for 20 minutes. Flip and bake for another 15 minutes.
In a pan add the rest of the blended mixture, add the rest of paprika and curry powder and bring to a boil.
Add the coconut milk and honey then continue to boil. Add the baked chicken and simmer for about 10 minutes or until the sauce thickens.
Add the lemon juice and remove from the heat
Serve and enjoy
