Flavourful Lemongrass Chicken Recipe

Marinated chicken cooked in a mixture of lemongrass and other ingredients resulting in a savoury, and slightly spicy dish.

Ingredients
  

  • 8 medium drumsticks
  • 2 stalks lemongrass roughly chopped
  • 1 tbsp cooking oil
  • 4 cloves garlic peeled
  • 1 inch ginger fresh
  • 1 tbsp curry powder
  • 4 green chillis
  • 1 tbsp paprika
  • 1 cup coconut milk
  • 1 tbsp honey
  • 2 tbsp lemon divided
  • salt and pepper to taste

Instructions
 

  • In a medium bowl, add the chicken, half of the curry powder, half of the paprika, oil and salt. Mix to incorporate
  • In a blend add the ginger, garlic, chillis, 1 tbsp lemon juice, lemongrass and half a cup of water and blend.
  • Add half of the blended mixture to the chicken and mix well. Marinate for a minimum of an hour or up to 24 hours.
  • Set your oven (I use this countertop oven ) to 425 degrees and bake for 20 minutes. Flip and bake for another 15 minutes.
  • In a pan add the rest of the blended mixture, add the rest of paprika and curry powder and bring to a boil.
  • Add the coconut milk and honey then continue to boil. Add the baked chicken and simmer for about 10 minutes or until the sauce thickens.
  • Add the lemon juice and remove from the heat
  • Serve and enjoy
