To make this recipe, you will need;
Ingredients
- 2 medium apples (peeled, cored and cut into small (1/2 inch) cubes
- 1 cup all-purpose flour
- 2/3 cup sugar
- 2 large eggs at room temperature
- 1/2 cup butter (softened)
- 1 1/4 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla
- 1 tsp ground cinnamon
- 1/4 cup warm milk
- 1 tbsp confectioners sugar (optional, for decoration)
Instructions
- Heat the oven to 350 degrees. Grease a 9′ loaf tin then line with a parchment paper.
- Sift flour, cinnamon, salt and baking powder into a bowl. Set aside
- In another bowl using a handheld mixer, beat the butter and sugar on high speed until; smooth and creamy
- Add the eggs and vanilla and continue to beat until light and fluffy
- Gradually mix in the flour mixture until combined
- Fold in the chopped apples and pour batter into the pan
- Bake for 45 minutes or until a toothpick comes out clean if inserted in the middle
- Let sit for 5-10 minutes then transfer to a cooling rack
- Using a sieve, sprinkle confectioners sugar if using
