It’s a high-protein, one-pan meal that’s perfect for meal preppers, busy parents, and anyone craving a satisfying stir-fry without the wait.

Why This Beef and Bok Choy Stir Fry Belongs in Your Weekly Rotation

This isn’t your average beef stir fry. By using flank steak and a quick marinade, the beef stays juicy and tender. The bok choy adds a crunchy, fresh element that balances the richness of the sauce. It all comes together in one skillet, making cleanup easy and the results delicious.

To make this masterpiece, you will need the following,

Ingredients

For the Beef

  • 1 pound flank steak, thinly sliced against the grain
  • 1/4 tsp baking soda
  • 1 tbsp soy sauce
  • 2 tbsp olive oil
  • 3 cups baby bok choy, halved if large
  • 1/2 tsp fresh ginger, minced
  • 1 tsp garlic, minced
  • 2 medium green onions, sliced (whites and greens separated)

For the Stir Fry Sauce

  • 1 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 1/4 tsp red pepper flakes
  • Sesame seeds, for garnish

Step-by-step Instructions

  1. Marinate the Beef:
In a medium bowl, combine the sliced flank steak with baking soda and 1 tablespoon soy sauce. Mix well and let sit for 20 minutes. This tenderizes the beef and adds flavour.
  2. Prepare the Sauce:
While the beef marinates, whisk together soy sauce, hoisin sauce, sesame oil, sesame seeds, cornstarch, and red pepper flakes in a small bowl. Set aside.
  3. Sear the Beef:
Heat olive oil in a large skillet or wok over medium-high heat. Add the marinated beef and cook until browned on all sides, about 2-3 minutes.
  4. Sauté Aromatics:
In the same skillet, add the garlic, ginger, and the white parts of the green onions. Stir-fry for 1-2 minutes until fragrant. Remove from the skillet and set aside.
  5. Cook the Bok Choy:
Add the bok choy to the skillet and stir-fry for another 1-2 minutes until slightly wilted but still crisp.
  6. Combine and Finish:
Return the beef to the skillet. Pour in the prepared sauce and stir everything together. Cook for another 2-3 minutes until the sauce is thickened and everything is hot and well-coated.
  7. Serve:
Remove from heat. Serve over warm white rice and garnish with the green parts of the green onions.
