Quick Beef and Bok Choy Stir Fry for Busy Weeknights

A one-skillet flavourful easy-to-make dinner that will be ready in minutes which makes it great for a weeknight meal. This beef and bok choy stir fry will give the takeout one a run for its money. Pair this with steamed white or brown rice, or noodles or simply add extra vegetables for a full meal.

Ingredients
  

  • 1 pound flank steak thinly sliced
  • 3 cups baby bok choy
  • 1/2 tsp ginger minced
  • 1 tsp garlic minced
  • 2 medium green onions sliced, whites and greens separated
  • 1/4 tsp baking soda
  • 2 tbsp olive oil
  • 1 tbsp soy sauce

For Sauce

  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp corn starch
  • 2 tbsp hoisin sauce
  • 1/4 tsp red pepper flakes
  • 1 tsp sugar

Instructions
 

  • In a medium sized bowl, combine the beef, baking soda, and 1 tbsp soy sauce and set aside for 20 minutes
    1 pound flank steak, 1/4 tsp baking soda, 1 tbsp soy sauce
  • While waiting, combine all the sauce ingredients in a bowl and set aside
    1 tbsp sesame oil, 1 tbsp corn starch, 2 tbsp hoisin sauce, 1/4 tsp red pepper flakes, 1 tsp sugar, 1 tbsp soy sauce
  • Heat olive oil in a skillet and the steak pieces.

  • Add garlic, ginger and whites of the onion and cook for 2-3 minutes. Remove and set aside
    1/2 tsp ginger, 2 medium green onions, 1 tsp garlic

  • In the same. skillet, add the box choy and stir for 1-2 minutes

  • Return the cooked beef to the skillet and stir in the sauce. Mix well and cook until hot and bubbly.
  • Remove from heat. Serve over white rice and garnish with the green onions.
