Instructions
 

  • In a small bowl, beat eggs, half & half and salt. Set aside
  • Heat a medium non-stick skillet over medium heat then add the olive oil and sausage pieces.
  • Sautee for a few minutes until it starts to brown then add onions.
  • Cook for another 2 minutes until the onions are translucent then add the bell peppers and red pepper flakes. Cook for another 2 minutes then using a slotted spoon, remove and set aside.
  • In the same skillet, add the egg mixture and scramble until the eggs are just cooked through (about 2-3 min) Remove and set aside
