In a small bowl, beat eggs, half & half and salt. Set aside
Heat a medium non-stick skillet over medium heat then add the olive oil and sausage pieces.
Sautee for a few minutes until it starts to brown then add onions.
Cook for another 2 minutes until the onions are translucent then add the bell peppers and red pepper flakes. Cook for another 2 minutes then using a slotted spoon, remove and set aside.
In the same skillet, add the egg mixture and scramble until the eggs are just cooked through (about 2-3 min) Remove and set aside
Assembling the Burritos
Spread 1 tbsp in the centre of a tortilla
Top with the sausage mix followed by eggs then avocado, eggs and cheese then drizzle lemon juice
Do not overfill, otherwise, it will be difficult to roll
Flap the bottom of the burrito carefully. Fold in the edges tightly and roll to seal. Repeat with the rest of the burritos.
