Directions

Step 1

In your medium saucepan over medium heat, heat the olive oil. Add the onion and parsnips, and cook for about 10 minutes until the parsnips soften and the onion is translucent.

Add the tofu and cook until it softens about 2 minutes.

Add the frozen peas and cover with the vegetable broth. Let it boil, adjust to a simmer, covered, for about 15 minutes, until the peas soften.
