For marinade

  • 4 bone-in chicken thighs
  • 2 tbsp hoisin sauce
  • 1 tbsp fresh lemon juice
  • 1/2 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp paprika
  • 1 tsp chilli powder
  • 1/2 tsp salt or to taste

For cooking

  • 3 medium potatoes, peeled, cut into half then sliced into medium pieces
  • 1 medium onion, thinly sliced
  • 2 tbsp chicken broth powder
  • 4 garlic cloves, minced
  • 1 tsp minced ginger
  • 1/2 cup cooking oil
  • 3 medium carrots (peeled and cut into matchsticks)
  • 1 bunch of green beans (washed and cut into matchsticks)
  • 1 small habanero (optional)
  • 1 cup tomato sauce
  • 1 cup water

Instructions:

  1.  Place the chicken in a medium bowl and add the marinade ingredients i.e. hoisin sauce, lemon juice, black pepper, onion powder, garlic powder, paprika, chilli powder, and salt. Mix well and marinate for at least 30 minutes
  2.  Add oil to a nonstick pan and fry the chicken thighs until golden brown and cooked through. Remove the chicken from the pan and using the same pan and oil, fry the potatoes and set aside. Filter oil if dirty and clean the pan if needed.
  3. Add 2 tbsp of oil into the skillet and add the onions. Sautee until translucent and slightly browned. Add garlic and ginger followed by carrots and chicken broth powder and saute for about 3 minutes.
  4. Add the tomato sauce, and habanero if using and simmer for 5 minutes. Add water and simmer for another 2 minutes.
  5. Add the green beans and chicken back to the skillet and mix to combine. Add the fried potatoes, cover and simmer for 5 minutes. Taste and adjust the salt to your taste.
  6.  Serve and enjoy!
