Crafting Your Flavorful Breakfast Pepperoni Egg Scramble

Making a breakfast pepperoni egg scramble is simpler than you might think, and the payoff in flavor is immense. This recipe is designed to be quick, efficient, and incredibly satisfying, perfect for those busy mornings when you need a hearty meal fast. The secret to its success lies in perfectly cooked eggs combined with the delightful saltiness of pepperoni and the freshness of vegetables. You’ll wonder how you ever managed breakfast without it!

Yields: 4 servings Prep time: 10 minutes Cook time: 10-15 minutes

Ingredients:

  • 8 large eggs
  • 1/2 medium onion, diced
  • 3 tbsp olive oil
  • 1/2 large red bell pepper, diced
  • 1 cup pepperoni pieces, diced
  • 1 cup cherry tomatoes (or 10-15 pieces), sliced into half
  • 1/2 cup shredded cheddar cheese (optional)
  • Salt & black pepper, to taste
  • 3 tbsp Miracle Whip or mayonnaise OR 1/4 cup heavy cream / half & half
  • 1/4 tsp crushed pepper (optional)

Step-by-Step Instructions:

  1. Prepare the Egg Mixture: In a medium-sized bowl, whisk together the 8 large eggs until well beaten. Add your chosen creamy component: 3 tablespoons of Miracle Whip or mayonnaise, or 1/4 cup of heavy cream or half & half. Stir in the 1/4 teaspoon of crushed pepper if using, along with a pinch of salt and black pepper to taste. Finally, gently fold in the 1 cup of halved cherry tomatoes and set the mixture aside.
  2. Sauté Aromatics: Heat 3 tablespoons of olive oil in a medium-size non-stick pan over medium heat. Add the 1/2 medium diced onion to the hot oil. Sauté for about 3-5 minutes, stirring occasionally, until the onions become translucent and fragrant, softening nicely without browning too much.
  3. Add Peppers & Pepperoni: To the softened onions, add the 1/2 large diced red bell pepper and the 1 cup of diced pepperoni pieces. Continue to sauté for an additional 3 minutes, stirring occasionally. This allows the pepperoni to crisp up slightly and release its savory oils, infusing the vegetables with its delicious flavor.
  4. Pour in Eggs: Once the vegetables and pepperoni are ready, pour the prepared egg mixture evenly over everything in the skillet. Allow the eggs to set undisturbed for 30-45 seconds. This initial setting time helps create larger, fluffier curds. Do not stir or scramble immediately.
  5. Scramble Gently: Using a spatula, gently push the cooked portions of the eggs from the edges of the pan towards the center. As you push, tilt the pan slightly to allow any uncooked egg mixture to flow into the hot, empty spaces. Continue this gentle pushing and folding motion for about 2-3 minutes, until most of the eggs are cooked through but still moist and creamy, avoiding overcooking.
  6. Cheese & Serve: Once the eggs are mostly cooked to your desired consistency, reduce the heat to low. If using, sprinkle the 1/2 cup of shredded cheddar cheese evenly over the top of the scramble. Cover the pan with a lid for 1-2 minutes, allowing the cheese to melt into a gooey, delicious layer. Taste and adjust salt and pepper if needed.
  7. Enjoy: Remove from heat and serve immediately. Scoop generous portions onto plates and get ready to enjoy this incredibly satisfying and flavorful breakfast!

Tips on How to Serve Best:

This savory breakfast egg scramble is fantastic on its own, but it also pairs wonderfully with a few simple additions.
