There is nothing quite like the aroma of a freshly roasted chicken filling your kitchen. Whether for a family dinner or a weekend gathering, mastering the art of a juicy roasted chicken is a skill every home cook should have. Butterflying and brining your chicken ensures maximum flavour and tenderness, making it a dish everyone will crave.

The Secret to Juicy Roasted Chicken

The secret to achieving a juicy roasted chicken lies in two key techniques: butterflying and brining. Butterflying, also known as spatchcocking, involves removing the chicken’s backbone using a sharp knife or a pair of scissors. so it lays flat. This method allows for even cooking and ensures that the meat stays moist while the skin becomes beautifully crisp.

Brining, is a simple yet transformative step that helps lock in flavour and moisture. The meat absorbs the liquid by soaking the chicken in a saltwater solution, resulting in tender, juicy bites. Here’s how you can do it:

  1. Prepare the Brine: Dissolve 1/4 cup of salt in 4-6 cups of water. For extra flavour, add aromatics like garlic, bay leaves, or herbs.
  2. Brine the Chicken: Submerge the chicken in the brine for 30 minutes. For best results, ensure the entire chicken is covered.
  3. Rinse and Dry: Once the brining is complete, quickly rinse the chicken under cold water to remove excess salt. Pat it dry with paper towels to ensure crispy skin during roasting.

How to Prepare the Perfect Juicy Roasted Chicken

You will need:

Equipment

  • Water Kettle
  • A large mixing bowl
  • A Kitchen Scissors
  • A meat Thermometer

Ingredients

For Brining

  • 1/4 cup salt
  • 1 cup hot water to dissolve the salt
  • 5-6 cups cold water

For seasoning

  • 1.7 kg/3.6 lbs whole chicken
  • 1 tbsp olive oil/oil of choice
  • 1 tbsp smoked paprika
  • 1 tbsp chicken bouillon powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp crushed red pepper flakes
  • 2 tbsp lemon juice, fresh
  • 14g poultry blend

Instructions

  1. Brine the chicken: Dissolve 1/4 cup of salt in 1 cup hot water then mix it with 4-6 cups of cold water, and ensure the chicken is covered. Set aside for 30 minutes. Once done, give it a quick rinse then pat dry with a paper towel.
  2. Season Generously: In a small bowl, mix the olive oil, smoked paprika, chicken bouillon powder, garlic powder, onion powder, crushed red pepper flakes, and lemon juice. Make small cuts all over the chicken then spread the mixture evenly over it.
  3. Roast Evenly: Preheat your oven to 425°F (220°C). Place the poultry blend (thyme, rosemary, and basil are classic choices that add a delicious depth of flavour) under the chicken on a wire rack over a baking sheet, skin-side up, to allow air circulation. Roast for 50-55 minutes or until the internal temperature reaches 165°F (74°C) at the thickest part of the meat.
  4. Let It Rest: Once roasted, cover with foil and let the chicken rest for 10-15 minutes. This step allows the juices to be redistributed, ensuring every bite is flavorful and moist.

Frequently Asked Questions (FAQs)

1. Why should I brine the chicken before roasting?

Brining lets the meat soak up saltwater, which locks in moisture and flavor. It’s what keeps the chicken juicy instead of dry after roasting.

2. What does butterflying the chicken actually do?

Removing the backbone lets the bird lie flat, so it cooks more evenly. This also helps the skin crisp up nicely while the meat stays tender.

3. What temperature and time should I roast the chicken at?

Roast at 425°F (220°C) for about 50–55 minutes. Utilize a meat thermometer to assure that the thickest section gets a temperature of 165°F (74°C).

4. Why is resting the chicken after roasting important?

Resting for 10–15 minutes under foil lets the juices settle back into the meat. Skipping this step means those juices spill out when you carve, leaving drier meat.

5. Can I customize the seasoning blend?

Yes, the base mix of paprika, garlic, and onion powder works well, but you can swap in spices like cumin or chili powder. Using fresh herbs such as thyme or rosemary can really enhance the flavor.

About Devine Dishes A lifelong love of cooking, one delicious recipe at a time. Welcome to Devine Dishes! I'm so glad you're here. I'm the cook, recipe creator, and food lover behind this little corner of the internet. Born and raised in Kenya, my love for cooking started when I was very young. Even as a child, I would happily volunteer to cook for the family, leaving the dishes and laundry for my siblings. Looking back, I think I had already discovered my passion and a clever way to avoid some chores! 😜 Where My Love for Cooking Began In high school, I chose Home Science and quickly discovered that baking was something I truly enjoyed. I went on to win awards in provincial school baking competitions for three consecutive years. Those were incredibly proud moments for me, and I loved the feeling of creating something delicious with my own hands. But not everyone saw cooking the way I did. I still remember the day my chemistry teacher laughed out loud in class after I received one of my baking medals. He told me I was wasting my time with cooking and that I should focus on the sciences, which would give me a better future than cookies and cakes. It was an embarrassing moment, especially as a student who was proud of something she had worked hard to achieve. But I didn't stop cooking. That experience stayed with me, not because it changed my passion, but because it reminded me that sometimes you have to believe in yourself even when others don't understand your dreams. From Cooking for Family to Building a Food Business Over the years, my love for cooking has taken me on quite a journey. I've explored different food business ideas, from cooking and selling chapatis and mandazis to catering, meal preparation, and delivery. Each experience taught me something new about food, business, and the joy of sharing a good meal with others. Today, I'm excited to bring that passion to food blogging. Devine Dishes is a place where I share the recipes I love, the ones I'm learning, and the ones I can't wait for you to try. You'll find African and Kenyan favorites, comforting family meals, delicious baking recipes, and practical dishes that make cooking at home enjoyable. My goal is simple: to help you discover recipes that are delicious, approachable, and worth making again. More Than Just Recipes For me, food has always been about more than feeding people. It's about family, memories, creativity, and bringing people together. When I'm not working, you'll often find me trying out new recipes, creating and editing content, or spending time with family. Sometimes we're swimming, watching TV, or simply chatting over a good meal. Those ordinary moments are some of my favorite moments. I also love traveling and discovering new places, cultures, and foods. I'm hoping to do much more of it in the near future, and I'm excited about the inspiration those experiences will bring to my cooking and future recipes. Thank You for Being Here Whether you're visiting Devine Dishes for a Kenyan recipe, looking for something delicious to bake, or simply exploring new meals to try, thank you for being part of this journey. Every recipe shared here is a little piece of my love for cooking, my experiences, and the belief that it's never too late to pursue something you're passionate about. I hope you find something delicious, make wonderful memories around your table, and come back often. Happy cooking! With love, Milli The heart behind Devine Dishes
