Ingredients
  

  • 3 mini cucumbers diced into half moons
  • 2 medium avocados peeled and diced
  • 1 cup grape tomatoes cut into two
  • 1 small red onion thinly sliced
  • 2 tbsp olive oil
  • 3 tbsp fresh lemon juice
  • 1 tbsp honey
  • 1/2 tsp salt or more to taste
  • 1/4 tsp black pepper or more to taste
  • 2 tbsp chopped cilantro optional

Instructions
 

  • In a large bowl, combine the diced cucumbers, tomatoes, and red onion.
  • Add the diced avocadoes
  • In a small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper until well combined.
  • Pour the dressing over the vegetables and toss gently to coat.
  • Sprinkle the chopped cilantro over the top of the salad if using.
  • Serve immediately or chill in the refrigerator until ready to serve.
