Masala Chicken Roast Recipe

Ingredients
  

For the marinade

  • 1 lb whole chicken
  • 2 tsp garlic minced
  • 1/2 cup sour cream
  • 1 tbsp cooking oil
  • 1 tbsp salt or to taste
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp turmeric
  • 1 tbsp paprika
  • 1 tsp garam masala
  • 1/4 tsp cayenne pepper
  • 1/2 tsp ground ginger
  • 1 medium lemon squeezed

For under chicken

  • 6 medium potatoes peeled and halved
  • 2 large carrots peeled and cut into chunks
  • 1 large onion quartered
  • 6 cloves garlic peeled
  • 1/4 cup chicken broth
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, mix the marinade ingredients
    Lift the skin from the neck area and loosen the skin from the chicken. Using your hands, spread the marinade over the chicken and under the skin.
  • Preheat the oven to (450°F).
  • Spread the sliced onions, and garlic on the tray. Place chicken on top of the onions and garlic
  • Season potatoes and carrots with salt and pepper then arrange on the sides of the chicken then place into the oven
  • Pour any remaining marinade over the chicken and potatoes.
  • Place the baking tray in the preheated oven and roast for 15 minutes.
  • Reduce the temperature to 375 and bake for 30 minutes. Remove, baste the chicken then return to the oven
  • Remove the chicken from the oven and let it rest for a few minutes before serving
