In a large bowl, mix the marinade ingredients Lift the skin from the neck area and loosen the skin from the chicken. Using your hands, spread the marinade over the chicken and under the skin.
Preheat the oven to (450°F).
Spread the sliced onions, and garlic on the tray. Place chicken on top of the onions and garlic
Season potatoes and carrots with salt and pepper then arrange on the sides of the chicken then place into the oven
Pour any remaining marinade over the chicken and potatoes.
Place the baking tray in the preheated oven and roast for 15 minutes.
Reduce the temperature to 375 and bake for 30 minutes. Remove, baste the chicken then return to the oven
Remove the chicken from the oven and let it rest for a few minutes before serving
