Loaded Baked Potatoes

Ingredients
  

  • 2 large russet potatoes
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter melted
  • 3/4 tsp salt or to taste
  • 1/2 tsp ground black pepper
  • 3 medium scallions chopped
  • 1/2 cup sour cream
  • 3/4 cup shredded cheddar
  • 4 strips bacon chopped into small pieces, then cooked
  • 2 tbsp chives chopped, for garnishing

Instructions
 

  • Preheat the oven to 400 degrees F (200 degrees C)
  • Prick the top of the potato with a fork then rub each potato with oil
  • Place the potatoes on a baking sheet and bake for 1 hr.
  • Remove the potatoes from the oven and cut each into half (lengthwise)
  • Using a spoon, gently scoop out the inside flesh of the potatoes and transfer to a bowl. Do not throw the skin Tip; if potatoes are not fully cooked, microwave for 2-3 minutes before the next step
  • Add the melted butter, sour cream, scallions, salt, pepper, half the cheese and combine with a fork until evenly mixed
  • Using a spoon, transfer the mixture back into the potato skin and bake for 10 min
  • Sprinkle the potatoes with the remaining cheese and bacon and bake for another 5 minutes
  • Garnish with chives and serve
  • Enjoy!
