Instructions
Preheat the oven to 400 degrees F (200 degrees C)
Prick the top of the potato with a fork then rub each potato with oil
Place the potatoes on a baking sheet and bake for 1 hr.
Remove the potatoes from the oven and cut each into half (lengthwise)
Using a spoon, gently scoop out the inside flesh of the potatoes and transfer to a bowl. Do not throw the skin Tip; if potatoes are not fully cooked, microwave for 2-3 minutes before the next step
Add the melted butter, sour cream, scallions, salt, pepper, half the cheese and combine with a fork until evenly mixed
Using a spoon, transfer the mixture back into the potato skin and bake for 10 min
Sprinkle the potatoes with the remaining cheese and bacon and bake for another 5 minutes
Garnish with chives and serve
