Ingredients
  

  • 4 medium lamb chops
  • 2 tbsp cooking oil
  • 1 tsp Rosemary chopped
  • 1/2 tbsp basil chopped
  • 1/2 tsp thyme
  • 1/4 tsp salt
  • 1/4 cup scallions minced
  • 1/3 cup balsamic vinegar
  • 1 tbsp butter
  • 1/2 cup heavy cream
  • black pepper to taste

Instructions
 

  • Place the lamb chops in a bowl and add the rosemary, basil, thyme, and salt then mix well to combine. Marinate for about 2 hours or overnight
  • Preheat the girl or skillet to medium-high heat then add the chops, setting aside excess herbs to be added later.
  • Cook the chops for 4-5 minutes on each side, or until cooked to your desired level of doneness. Set aside
  • Add the scallions to the same pan and cook for a few minutes while scraping the bottom. Add the excess herbs set aside earlier on
  • Pour vinegar into the and continue scraping the bottom of the pan. 
  • Add heavy cream and bring to a boil then add the chops.
  • Let it simmer while turning the chops every now and then to infuse the flavour. 
  • Cook until most of the liquid evaporates and is left with about a quarter of the initial liquid.
  • Serve the juicy lamb chop hot and enjoy.
