Roast a variety of vegetables to perfection in your air fryer with minimal ingredients and effort. This quick and simple dish is perfect for a healthy and delicious side dish or snack.
Wash the the vegetables then cut into evenly sized pieces to ensure even cooking.
In a small bowl, mix the olive oil, paprika, garlic powder, onion powder, black pepper, lemon juice, and honey
In a large bowl, toss the vegetables with the spice mixture and spread them in a single layer in the air fryer tray/basket, making sure not to overcrowd them.
Set the air fryer to 400°F (200°C) and cook for 15-20 minutes. Halfway through roasting, shake the sheet/basket to redistribute the vegetables and promote even cooking.
Once the veggies are tender and slightly crispy, remove them and serve immediately.
