Easy One Skillet Cabbage

A delicious one-pot meal that is filled with vegetables and is easy to prepare.  This recipe is perfect for a quick and easy dinner option that can be ready in under an hour that the whole family will enjoy.

Ingredients
  

  • 1 small cabbage head, shredded
  • 3 medium carrots peeled and sliced
  • 3 medium russet potatoes peeled and cubed
  • 4 medium garlic cloves minced
  • 1 tsp ginger minced
  • 3 tbsp butter
  • 2 tbsp olive oil or oil of choice
  • 1 medium onion roughly chopped
  • 1 tbsp paprika
  • 1/2 tsp red pepper flakes
  • 1/2 tsp turmeric
  • 1 tbsp salt or to taste

Instructions
 

  • Heat the oil in a skillet over medium heat
  • Add the potatoes and shallow fry until golden
  • Add the garlic, ginger, onions and carrots and saute. Add salt and continue to saute for about 5 minutes
  • Add butter to the skillet, followed by paprika, red pepper flakes, and turmeric and stir to mix.
  • Add the shredded cabbage and turn the heat to low-medium. Cover and simmer for 10 minutes stirring in between
  • Remove once it softens
  • Serve, sprinkle with parsley and enjoy!
