This easy and healthy one-pot Cajun chicken rice recipe is a flavorful and satisfying meal made with tender chicken, fragrant rice, and bold Cajun spices. 2cupsJasmine riceor basmati soaked in cold water for 20 min
3cupswateror chicken broth

Instructions
Add the chicken thighs into a bowl and season with 1 tbsp of the cajun seasoning, and some salt
Mix well. Set aside
Heat the olive oil in a large pot or deep skillet over medium heat. Add the chicken pieces and cook for 5-7 minutes until golden brown. Set aside
Brown both sides then set aside. The chicken will still be raw on the inside but that's okay as it will continue to cook. Cut the chicken into desirable sizes and set aside.
Add onions, garlic, and bell peppers to the same skillet. Stir for a few minutes
Add the rest of the ingredients (the leftover cajun, cayenne, turmeric, and rice) and sautee well to dissolve bits from the bottom of the skillet
Add water, and arrange the sliced chicken on top of the rice. Top the rice with butter then reduce the heat to low, cover, and let it simmer for 20-25 minutes or until the rice is tender and the liquid has absorbed.
Serve hot
