Easy Air-Fried Cod Fillet

Ingredients
  

  • 4 medium cod fillets
  • 1/4 cup soy sauce
  • 3 tbsp sugar or honey
  • 3 tbsp rice vinegar
  • 2 tbsp cooking oil
  • 2 cloves garlic minced
  • 1 medium jalapeno finely chopped (optional)
  • 1 tbsp sesame oil
  • 1/2 tsp onion powder
  • 1 small scallions for garnishing

Instructions
 

  • To prepare, coat the fish with olive oil after patting it dry with a paper towel.
  • Sprinkle black pepper, and then place it in the air fryer basket.
  •  Set the fryer at 400°F for 10-12 minutes depending on thickness.
  • Meanwhile, whisk the soy sauce, sugar/honey, rice vinegar, black pepper, and onion powder, in a bowl.
  • Heat oil in a non-stick pan over medium heat then add the garlic and jalapeno if using. Cook for about 1 minute. Don't let the garlic brown.
  • Add the sauce to the pan and cook for 8-12 minutes until slightly thickened.
  • Remove and add the sesame oil and mix well.
  • Serve the fish with the sauce spooned on top, garnished with scallions.
