Ingredients
  

  • 1 lb tilapia or cod, or tilapia, or snapper, cubed
  • 2 tbsp cooking oil
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1/2 tsp ginger ground
  • 1 tsp garam masala
  • 1 tsp paprika
  • 1 cup crushed tomatoes or 2 medium ripe tomatoes, diced
  • 1 cup coconut milk
  • 1 tsp curry powder
  • 1 tsp sugar
  • 1/2 tsp chilli powder
  • 2 tbsp chicken broth powder
  • salt and pepper to taste
  • juice of half a lemon optional
  • 1 tbsp cilantro to garnish

Instructions
 

  • Heat the oil in a large pan over medium heat. Sauté the onions until golden brown, add garlic, and cook until fragrant.
  • Stir in the tomatoes, cook down to a thick consistency then add ground ginger, garam masala, paprika, curry powder, sugar, chilli powder, chicken broth, and salt and pepper. Mix well to combine
  • Add the coconut milk and stir to combine. Let the mixture simmer gently for 3-5 minutes to allow the flavours to meld.
  • Gently place the fish pieces into the curry sauce. Cover and cook for 5-8 minutes, or until the fish is tender and fully cooked.
  • If using, squeeze in the lemon juice, sprinkle with fresh cilantro, and serve hot with rice or bread.
