Heat the oil in a large pan over medium heat. Sauté the onions until golden brown, add garlic, and cook until fragrant.
Stir in the tomatoes, cook down to a thick consistency then add ground ginger, garam masala, paprika, curry powder, sugar, chilli powder, chicken broth, and salt and pepper. Mix well to combine
Add the coconut milk and stir to combine. Let the mixture simmer gently for 3-5 minutes to allow the flavours to meld.
Gently place the fish pieces into the curry sauce. Cover and cook for 5-8 minutes, or until the fish is tender and fully cooked.
If using, squeeze in the lemon juice, sprinkle with fresh cilantro, and serve hot with rice or bread.
