Creamy Coconut Salmon – A Flavor-Packed One-Pan Seafood Delight
This creamy coconut salmon is a quick, one-pan dinner that’s bursting with flavor. Flaky salmon fillets are simmered in a luscious coconut milk sauce infused with garlic, lime, and herbs. Perfect for weeknights when you want something healthy, filling, and restaurant-worthy.
Season salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Place the salmon skin-side down and sear for 3-4 minutes per side or until golden brown. Remove and set aside.
In the same skillet, reduce heat to medium. Add chopped onions and sauté until soft, about 3 minutes. Stir in garlic and ginger (if using), and cook until fragrant.
Pour in coconut milk, lime juice, lime zest, honey, and chili flakes. Stir well, let it simmer for 4-5 minutes to thicken slightly.
Return salmon fillets to the skillet, spooning sauce over them. Simmer for another 3-4 minutes or until fully cooked through.
Garnish with chopped cilantro and serve with lime wedges. Best enjoyed with steamed rice or sautéed greens.
