Ingredients
  

  • 480 g salmon Fillets 4 oz each
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 3/4 cup full-fat coconut milk
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • 1 tbsp honey
  • 1/4 tsp chilli flakes adjust to taste
  • salt and pepper
  • cilantro chopped
  • Lime wedges for serving

Instructions
 

  • Season salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Place the salmon skin-side down and sear for 3-4 minutes per side or until golden brown. Remove and set aside.
  • In the same skillet, reduce heat to medium. Add chopped onions and sauté until soft, about 3 minutes. Stir in garlic and ginger (if using), and cook until fragrant.
  • Pour in coconut milk, lime juice, lime zest, honey, and chili flakes. Stir well, let it simmer for 4-5 minutes to thicken slightly.
  • Return salmon fillets to the skillet, spooning sauce over them. Simmer for another 3-4 minutes or until fully cooked through.
  • Garnish with chopped cilantro and serve with lime wedges. Best enjoyed with steamed rice or sautéed greens.
