Every family's summer favourite salad. Made with dijon, celery, mayo and other fun ingredients. Great for lunch sandwiches, last-minute office potlucks and family gatherings.
In a large bowl, add all the ingredients minus the cooked chicken. This includes 2 chopped scallions, 1 stalk of finely chopped celery, 1 teaspoon of Dijon mustard, 3 tablespoons of finely chopped dill pickle, 1/4 cup of sour cream, 1/2 teaspoon of black pepper, 1/2 teaspoon of salt, 1 tablespoon of lemon juice, and 1 teaspoon of sweetener.
Use a spoon or a whisk to thoroughly mix these ingredients together in the bowl. Continue mixing until all the components are well combined and you have a smooth, well-blended dressing base. This ensures all the flavors are evenly distributed before the chicken is added, leading to a perfectly seasoned salad.
Now, add the 3 cups of shredded cooked chicken to the bowl with the prepared dressing. Gently fold the chicken into the mixture. Mix well, ensuring that every piece of chicken is coated with the creamy dressing and integrated with the chopped vegetables and seasonings. Be careful not to overmix, as this can break down the chicken too much.
Your creamy chicken salad is now ready to be enjoyed! Serve it as is, perhaps in a small bowl with crackers on the side, or spread generously onto your favorite sandwich bread. It's also delicious in lettuce wraps or as part of a larger salad. For best flavor, you can cover and chill it for about 30 minutes before serving to allow the flavors to meld, but it's perfectly delicious right away
