Tasty Honey Glazed Cauliflower and Carrots
A quick, flavorful side dish of lightly blanched cauliflower and carrots tossed in a sweet, buttery honey glaze with paprika and garlic. Perfect for weeknights or festive tables.

2 medium carrots peeled and cut diagonally into 1/2 inch slices 1 cup cauliflower florets 2 tbsp butter 1 tsp honey 1 tbsp lemon juice salt and pepper to taste 1 tsp paprika 1 clove garlic minced parsley to garnish
In a medium saucepan, bring 3 cups of water to a boil. Add a generous pinch of salt and the sliced carrots. Let them cook for 1 minute.
Add the cauliflower florets to the same pot. Boil for just 30 seconds, then drain both veggies and set aside.
In a skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant (be careful not to brown it).
Remove the pan from heat and stir in the honey and paprika. Add the blanched veggies and toss until fully coated in the glaze.
Drizzle with lemon juice, season with more salt and pepper to taste, and garnish with freshly chopped parsley. Serve warm and enjoy!
