Add the sausages, sautee for 2 minutes then add the garlic and onion and sautee for another 2 minutes. Add butter and continue to cook until it melts and is bubbly.
Add the cajun seasoning and mix well to combine.
Add the cabbage and cover. Cook for 5 minutes
Remove the lid and stir to mix. Once it softens, add the bell pepper and stir again. You can remove them from the stove at this point if you like the bell peppers crunchy or cover and simmer for an additional 2 minutes.
Taste and adjust salt to taste. Serve and sprinkle scallions to garnish
