Ingredients
  

  • 1 lb rotisserie chicken chopped into pieces
  • 2 medium celery stalks chopped into small pieces
  • 2 medium carrots chopped chopped into small pieces
  • 1 medium onion roughly chopped
  • 2 tbsp cooking oil
  • 3 cloves garlic minced
  • 1 tsp ginger minced
  • 1 tbsp paprika
  • 1/2 tsp red pepper flakes optional
  • 2 tbsp chicken bouillon powder
  • 2 bay leaves
  • 1 cup pasta
  • black pepper to taste
  • 7 cups water

Instructions
 

  • Heat oil in a large pot. Sauté the onions until golden browned
  • Add the celery, carrots, garlic and ginger and cook for about 5 minutes
  • Add the spices i.e. paprika, red pepper flakes, chicken bouillon, and black pepper. Mix well
  • Add water and then add the chicken bones with the bay leaves. Cover and cook for about 20 minutes
  • Remove the bones then add the pasta and chopped chicken
  • Cover and simmer for about 45 minutes. Taste and adjust salt to taste
  • Serve and enjoy!
