Instructions
Prepare the potatoes Peel the potatoes and cut them into bite-sized slices. Rinse them with cold water to clear excess starch.
Parboil the potatoes Place potato slices in pot and cover them with water. Add salt to taste and let it to a boil. Cook for almost 5–8 minutes, depending on the thickness, until they are just starting to soften but are not falling apart.Drain the potatoeswell and allow them to steam-dry for a few minutes.
Fry the onions Heat 1 tablespoon oil(vegetable oil) in a large frying pan on medium heat. Add sliced onion and cook for almost 5–8 minutes, stirring occasionally, until soft and golden. If using green chilli, add it towards the end of cooking. Remove the onions from the pan and keep them aside.
Fry the potatoes Add remaining vegetable oil to the same pan. Add the drained potato slices in a single layer, working in batches if necessary. Fry for almost 10–15 minutes, turning sometimes, until the potatoes are golden on the outside and tender inside.
Season with the remaining salt as needed, black pepper and paprika if using.
Add the fried onions Return the fried onions to the pan and gently toss with the potatoes or arrange the onions generously over the potatoes when serving.
Garnish with freshly chopped coriander, if desired. Serve hot and enjoy!
