Preheat your oven to 350°F (175°C). In a mixing bowl, beat together the butter, granulated sugar, and brown sugar until smooth and creamy.
Add the peanut butter, egg and vanilla extract, mixing until fully combined.
Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. Use a hand mixer if needed to form an even dough
Using an ice cream scoop or your hands to roll the dough into small balls (about 1 tablespoon each) and place them on a baking sheet lined with parchment paper. Use a fork to press a crisscross pattern into the tops of each cookie.
