  • 4 large ripe tomatoes diced
  • 1 small red onion finely chopped
  • 1 fresh jalapeños or bird's eye chilies finely chopped (optional)
  • 2 tbsp fresh cilantro chopped
  • 1 tbsp lemon juice
  • ½ teaspoon salt or to taste
  •  Black pepper to taste

Instructions

  • Place the onion in a bowl of cold water for 5–10 minutes to reduce its sharpness. Drain and pat dry.
  • Add the tomatoes, onion, chilies (if using) and cilantro to a large bowl.
  • Pour in the lemon juice, sprinkle with salt and black pepper and gently toss everything together.
  • Let the kachumbari sit for 5–10 minutes so the flavors can come together. Taste and adjust the seasoning.
