Kachumbari is a fresh Kenyan tomato and onion salad made with lime juice, coriander and a touch of chili, no cooking required. Ready in under 15 minutes, it is the classic East African side for nyama choma, pilau and biryani.

Instructions
Place the onion in a bowl of cold water for 5–10 minutes to reduce its sharpness. Drain and pat dry.
Add the tomatoes, onion, chilies (if using) and cilantro to a large bowl.
Pour in the lemon juice, sprinkle with salt and black pepper and gently toss everything together.
Let the kachumbari sit for 5–10 minutes so the flavors can come together. Taste and adjust the seasoning.
