Fluffy Moist Banana Bread

Ingredients
  

  • 1 3/4 cup all-purpose flour
  • 1/2 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 medium ripe bananas mashed with a fork until smooth
  • 1/2 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/2 cup butter melted
  • 3/4 cup sugar
  • 1/4 cup milk whole or 2%
  • 2 large eggs

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan with butter or cooking spray then line with a parchment paper.
  • In a medium-sized bowl, mix the dry ingredients (flour, baking soda, baking powder, salt, sugar, cinnamon and salt).
  • Add the melted butter, eggs, and milk and whisk until just combined. Add the banana and whisk to incorporate. Do not overmix as it will result in tough bread
  • Pour the batter into the greased loaf pan
  • Bake the banana bread for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool for 10-15 minutes before removing it and placing it on a wire rack to cool completely.
