Ingredients
  

  • 1 bunch lettuce chopped/shredded
  • 2 mini cucumbers sliced
  • 1 medium avocado peeled and cubed
  • 1 cup cherry tomatoes sliced
  • 1 small onion sliced
  • 1/2 large red bell pepper sliced

For the Salad Dressing

  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar or lemon juice
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • salt and pepper to taste

Instructions
 

  • Wash your vegetables thoroughly to remove dirt or pesticides
  • Chop or slice them into bite-sized pieces for easy mixing and eating
  • Prepare your salad dressing by whisking together the olive oil, balsamic vinegar, honey, dijon mustard and salt and pepper.
  • In a large bowl, combine your prepared vegetables. Drizzle the dressing over the salad and toss gently to coat every piece evenly.
