  • 1 cup brown rice
  • 1 tbsp olive oil or cooking oil of choice
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 medium tomatoes diced
  • 1 tsp paprika
  • 1/2 tsp garam masala
  • 1/4 tsp crushed red pepper flakes
  • 1 tbsp butter
  • 2 cups water
  • salt and pepper to taste
  • fresh cilantro to garnish

Instructions
 

  • Soak the brown rice for about 30 minutes
  • Heat the oil over medium heat in a medium saucepan. Add the chopped onion and cook for 3-4 minutes until softened.
  • Stir in the minced garlic and cook for another minute.
  • Add the diced tomatoes, paprika, and cumin. Cook for 5-7 minutes, allowing the tomatoes to break down and release their juices.
  • Pour in the vegetable or chicken broth and bring the mixture to a boil.
  • Stir in the brown rice, add the butter then reduce the heat to low, and cover. Simmer for 35-40 minutes or until the rice is tender and has absorbed the liquid.
  • Fluff the rice with a fork, and garnish with fresh cilantro if desired.
