Prep the Potatoes by washing and scrubbing then cut them into 1-inch cubes. You can peel them or leave the skin on for added texture.
In a large bowl, toss the cubed potatoes with olive oil, paprika, salt, and pepper until evenly coated.
Preheat your air fryer to 400°F (200°C). Spread the potatoes in a single layer in the basket—don’t overcrowd them! Cook for 20 minutes, shaking the basket halfway through, until golden and crispy.
Transfer to a serving dish and sprinkle with fresh herbs or a dash of Parmesan if desired. Serve hot and enjoy!
